Cover a bamboo sushi mat with plastic wrap and place one nori seaweed sheet on top, shiny side down.
Evenly spread 1 cup of sushi rice on the seaweed and sprinkle sesame seeds, to taste.
Turn the sheet over to where the nori seaweed side is now on top.
Place 1/3 of the avocado slices and crab sticks horizontally on the seaweed, leaving 1 inch from the front edge.
Lift the front edge of the mat, covering the avocado and crab stick with the nori and rice, and gently roll it to the end. After rolled, slightly grip it all together to ensure it holds its shape.
Remove the bamboo sheet and cut the roll into 6-8 pieces. Repeat steps to make two more and enjoy.
