Teriyaki Steak Fajitas

Teriyaki in a tortilla? Yes! This fusion of Japanese/Hawaiian and Mexican foods is super easy and just as delicious. Our World Harbors Teriyaki Marinade & Sauce does all the flavor work for you, and keeps the meat tender and juicy.

Prep Time: 18-24  hours marinating; about 15 minutes grilling.

2 lbs. flank steak or skirt steak
1 bottle (16 fl. oz.) WORLD HARBORS Maui Mountain Teriyaki Marinade & Sauce
1-2 limes
1/2 small red onion
1 large avocado
6 ( 8”) flour tortillas

Measure 1/2 cup teriyaki marinade; cover and refrigerate. Place steak in a shallow, non-metallic baking dish or similar. Pierce meat all over with a fork. Pour remaining teriyaki marinade over steak; turn to coat. Cover and refrigerate 18-24 hours.

When ready to grill, slice a lime and add 2 teaspoons juice to the 1/2 cup reserved marinade; stir and warm up in microwave. Slice red onion. Peel and slice avocado, sprinkling with lime juice to prevent browning.

Preheat grill. Remove steak and discard marinade. Grill over medium heat about 8 minutes. Turn and grill about 8 minutes more or until cooked as desired. Timing depends on how thick the steak is.

Thinly slice grilled steak and place on warm tortillas. Add red onion and avocado; drizzle with lime-laced teriyaki sauce. Serve with lime wedges, if desired.

Makes 6 fajitas.

Note: To warm tortillas, preheat an iron frying pan, comal or griddle. One at a time, lightly smear a bit of water on both sides of a tortilla and heat on both sides. Or, without using water, warm tortillas in the microwave, each separated by a paper towel.
