Susie's Balsamic Salmon Salad

Clever Creations Recipe Contest Winner

Serve as a salad on top of lettuce, with tomato and cucumber or on rye bread with lettuce and tomato for a delicious sandwich.


1 can (15 oz.) red salmon (or two 7 oz. cans), drained and de-boned
1/2 small onion, finely chopped
2 stalks celery, finely chopped
1 oz. BARENGO Balsamic Vinegar (2 Tbsp.)
1/3 cup mayonnaise
1/2 tsp. pepper


Drain and de-bone salmon in a medium bowl. Add onion and celery. 

In a small bowl or 1-cup measuring cup, stir together balsamic vinegar, mayonnaise and pepper until smooth. Stir into salmon. 

Makes 4 servings. 

Total preparation and cook time: 15 minutes
