Shabu-Shabu

Ingredients

2 1/2 cups One-Pot Broth (view recipe)
1 cup sliced Shitake mushrooms
1/2 cup thinly sliced carrots
1/3 cup sliced scallions or green onions
Slice of fresh ginger
1 cup sliced asparagus
4 oz. firm tofu cut into 1-inch cubes
8 oz. thinly sliced beef, pork, chicken, firm white fish or peeled shrimp
2/3 cup spinach leaves or sliced Chinese Napa cabbage
1/2 cup bean sprouts
1/2 cup Oriental “cellophane" noodles
1/3 cup frozen peas, thawed

Directions

Pour broth into steamer pot. Add carrots, scallions, mushrooms and ginger to flavor the broth. Heat to boiling. Add remaining ingredients in the order given. Each person may wish to cook his own dinner. Simmer several minutes. Serve everything in bowls with some of the broth. (Thicken broth with a small amount of potato starch, if needed.) Serve with rice and Teriyaki Sauce if desired. 

Makes 4 servings.
