Plum Blossom Sauce


1-inch piece of dried chili pepper
1 can (1 lb.) purple plums in heavy syrup
1/3 cup MITSUKAN Mirin Sweet Cooking Seasoning
3 Tbsp. finely chopped crystallized or sugar ginger
Red food coloring (optional)


Remove seed from chili pepper and soak in small amount of hot water. Remove pits from plums. Chop chili pepper and puree with plums and syrup in food processor. Add Mirin and ginger; process until smooth. Mix in enough coloring for a good rosy plum color. Simmer 45 minutes until sauce is thick and glossy. 

Delicious served over chicken, duck or pork. Garnish each serving with edible blossom, if available.

Makes 4 servings or 1 1/4 cups sauce.
