Peppery Bleu Walnut Salad

Winner of the Clever Creations Recipe Contest 


1/4 cup NAKANO Seasoned Rice Vinegar-Original
1 Tbsp. MITSUKAN Mirin Sweet Cooking Seasoning
1 Tbsp. fresh lime juice
1/4 cup olive oil
1/2 tsp. freshly ground black pepper

8 cups mixed greens, torn into pieces
1 (8 oz.) can sliced water chestnuts, drained (optional)
3 green onions, thinly sliced
2 red apples, chilled
1/2 cup toasted walnuts, coarsely chopped
1/2 cup crumbled bleu cheese


Place dressing ingredients in a small jar. Seal and shake well. Set aside. 

For salad, toss greens, water chestnuts and onions together in a large bowl. Just before serving, core and dice apples. Add apples, walnuts, and cheese to salad. Toss. Pour dressing over salad and toss to coat. Serve immediately. 

Serving suggestions: Serve with Asian grilled pork, chicken or seafood for a delicious and healthy meal. This salad is also perfect for a light lunch.
