Marinated Olive Salad

Winner of the Clever Creations Recipe Contest - Greg F. 2nd Prize


1/4 cup BARENGO Balsamic Vinegar 
2 Tbsp. olive oil
1 cup chopped tomato
1/2 cup thinly sliced onion
1/2 cup pitted ripe olives, sliced
1/2 cup Spanish salad olives with pimiento, sliced
1 tsp. dried basil
1/2 tsp. dried oregano
Fresh ground black pepper


Mix all ingredients together. Marinate for at least 30 minutes to overnight. Season to taste with pepper. 

Can be stored in the refrigerator in a tightly sealed contained for 4 days.

Suggestions: Use a side dish, or toss with steamed vegetables or pasta. 

Judge’s Comments

  • Nice use of balsamic vinegar for a unique “salad” or antipasto. I don’t think I’d serve this over pasta though??

  • Doubled all ingredients except vinegar. Was too much vinegar for amount of ingredients.

  • Salty. Needs the marinating time to develop flavors.
