Lemon Pepper Grilled Salmon with Peach Salsa

Prepare this simple yet delicious and versatile dish for a weeknight meal or even when having friends over. And, even if you typically don’t think sweet flavors belong in your main course you’ll like this salsa. The peach adds a great dimension and crispiness to the dish that’s the perfect complement to the lemon-pepper and garlic World Harbors marinade.


2 salmon fillets
1/4 cup WORLD HARBORS Maine’s Own Lemon Pepper & Garlic Marinade & Sauce
1 shallot, diced
2 medium roma tomatoes, diced
1 peach, diced
3 tsp. green onions, thinly sliced
Juice from 1/2 a lime
Salt to taste


In a resealable bag or container, pour the lemon-pepper and garlic marinade and add the salmon. Let it marinate in the fridge for at least 30 minutes.

While the salmon marinates, dice the shallot, tomatoes and peach. Place these ingredients in a medium bowl and add the green onions. Add the lime juice and salt. Set aside.
Pre-heat the indoor grill to 475°F. (If you use an outdoor grill, cook on indirect heat.)

Cook the salmon fillets for about 5 minutes per side. (a couple more minutes if it’s thick)
