Island Mango Grilled Shrimp

Fly away to a tropical island with our easy shrimp skewers. 


1 bottle (16 oz.) WORLD HARBORS Island Mango Marinade & Sauce
Zest of one large orange or lemon
1 tsp. soy sauce
1 lb. large shrimp (16/20 size), peeled and deveined *
1 large mango, cubed, or pineapple cubes (2-3 cubes per skewer)
Red onion wedges (optional)
8 wooden skewers, 8” each


Stir together island mango marinade, citrus zest and soy sauce. Reserve 1/2 cup to serve on the side; cover and refrigerate. Pour remaining marinade over shrimp. Cover and refrigerate at least 10 hours or up to 18 hours, stirring once.

When ready to cook, preheat grill and remove shrimp from marinade. Thread 2 shrimp and 2-3 cubes of mango or pineapple on each skewer. Brush liberally with marinade. Grill 2 minutes; turn and grill 1 minute more or until shrimp turn opaque. Discard marinade. Serve skewers with reserved sauce, warmed up.

Makes 4 servings (2 skewers each).

* Notes
One pound large shrimp equals 18-20 shrimp, or 4+ per serving. Use smaller shrimp for
appetizer servings.  Soak wood skewers in water at least 15 minutes before grilling.
