Grilled Chicken with Pineapple Sweet n Sour Sauce

Summer entertaining is deliciously easy with World Harbors. Our Sweet ‘n Sour Sauce lends a kick of tropical flavor and convenience to grilled chicken. When you’re cooking for a crowd, this is the way to go! Recipe may be halved for smaller gatherings.

1 bottle (16 fl. oz.) WORLD HARBORS Maui Mountain Sweet ‘n Sour Sauce
2 tsp. soy sauce
1/2 tsp. ground ginger
1/2 tsp. onion powder
1/2 tsp. hot pepper sauce
1 can ( 8 oz.) crushed pineapple
5 lbs. chicken (drumsticks, wings, and/or thighs)

Whisk together sweet ‘n sour sauce, soy sauce, ginger, onion powder and hot pepper sauce. Set aside 1/2 cup of the sauce to brush on chicken as it cooks.

Open can of pineapple and use lid to press down on pineapple, draining off excess liquid.* Stir pineapple into remaining sauce. Spoon into individual, small serving bowls to use as a dipping sauce for grilled chicken.

Preheat grill. Sprinkle chicken with salt only, no sauce. Grill over medium heat: thighs and wings 10 minutes; drumsticks 15 minutes. (Use indirect heat for charcoal.) Turn chicken and baste cooked side with sauce. Grill 10 minutes more; turn again and brush with more sauce. Continue to turn and brush with sauce every 10 minutes until chicken is nicely browned and cooked through.

Discard any sauce used to baste chicken. Serve grilled chicken with sweet ‘n sour pineapple dipping sauce.

Makes 10 servings.

* Save juice drained from pineapple to use in mixed drinks or smoothies. Store in the refrigerator or freezer until ready to use.
