Classic Balsamic Vinaigrette


1/3 cup BARENGO or HOLLAND HOUSE Balsamic Vinegar
1 Tbsp. minced shallot (about 1 small)
2 tsp. Dijon style mustard
1/4 tsp. salt
Dash pepper
1 cup extra virgin olive oil


In a small bowl, combine balsamic vinegar, shallot, mustard, and salt and pepper; use a wire whisk to blend. Continue to whisk while pouring oil into vinegar mixture in a slow, steady stream. Use to dress salads. Refrigerate extra dressing. 

Makes about 1-1/3 cups.
