Apricot Balsamic Glazed Chicken

Ingredients

1 jar (12-oz.) apricot jam or preserves
1/3 cup BARENGO Balsamic Vinegar 
2 Tbsp. soy sauce
4 to 6 boneless, skinless chicken breasts
Cooking spray or drizzle of oil

Directions

Preheat oven to 375ºF. In a small bowl or measuring cup, mix together apricot preserves, balsamic vinegar and soy sauce; set aside. Spray skillet with non-stick cooking spray and warm to medium-high heat. Sear chicken breasts in the skillet, one minute per side to brown the chicken. Place browned chicken breasts in baking dish or pan and cover with apricot mixture. Cover and cook for 30 minutes, and then baste and uncover for 15 to 20 minutes more. Temperature on meat thermometer should reach 180ºF and juices run clear when pierced with knife. Apricot mixture should be bubbly.

This is a very easy, delicious, and attractive way to serve chicken, and it also creates a delicious aroma throughout the house.
